How do I customize the default template to something like this: “container, header, no footer”?
I have some plugin generated pages and I cannot have them displayed as the default blog setting because they add extra content on the right hand side.

Thanks for writing in!
The “container, header, no footer” page templates are only available for pages. It is not available for posts and custom posts types. For more details about the different page templates in the theme, please check this out:
Since you are using the Pro theme, you can simply go to Cornerstone > Layout Builder and create a single layout where you can have a container, header, footer layout. You can then assign this layout as the main layout to be used for your single job listing post type.

Can you please tell me how I do the following:

When the “job listing” pages are created they are not listed under “posts” or “pages” or “portfolio” but under their own section even though they seem to inherit the “default” template. How do I change the default to something else so they automatically inherit my template? I am not sure how I “assign” a layout.

You can create the layouts using the Layout Builder as shown in the video shared by my colleague. And you can assign those Layouts to any post types by using the Condition options under the Customize attribute. You can find the Job Listing post type in the dropdown shown in the given screenshot.
I would suggest you go through the following article on how you can assign the layouts.
