This is just a general question and not site specific. I have taken some time off and I’m a bit rusty so please be gentle. We have a a site that has its blog formatted in a very specific way due to our only content being worksheets that are displayed in the Grid plugin. We now want to begin to post real content posts in the blog but need the entries in that specific category to be displayed in a different way. What is the easiest way to achieve this? Is there a plugin that works well with your product that allows specific category formatting or is there a way to add a second blog that can be formatted differently?

If I am not mistaken, you are trying to show different Category Archive pages in different designs. If that is the case, you can use the Layout Builder to create different layouts and assign them to different categories with the conditions.
I would suggest you please go through the following article and video, which explain it.
Please note that the Layout Builder is only available with the Pro not with the X.

Thanks! I’m still a little confused. I will add this site in a Secure Note for you to see and as you will notice when you look at the posts, they all have a format that has small worksheet thumbnail and the individual post pages have widgets related to worksheets.
I would like to begin to add traditionally formatted blog posts with a wider featured image on top for only one new category called ‘Resources’ for instance. What is the best way to have the posts in only one category appear differently and also have different widgets?

As explained by @Tristup, you will have to create a custom Single layout using our Layout builder. Once you have created the desired layout, you can then set a condition that this layout is only applied to a single post under the “Resources” category. Something like this:
