I am trying to understand the difference between these editors, how they interact, and which is the better option. Can anyone advise?

Pro is built by us and offers great flexibility as well as a dedicated header and footer builder that lets you create unique header and footers for each and every individual page. Since we are the creator of Pro we clearly can recommend using it over any other page builder as it will work in the most efficient way in combination with our Pro theme.

I thought either was an option with your theme since it is on the Extensions page of your website. I thought this was a forum where other users could share perspective. 
WP Bakery is so badly supported by the X Theme that is no longer usable, so you don’t have any real choice.
Just try to build some pages and wait for issues to appear. Issues that never get fixed, release after release, like these:
If you decide to (or have to) apply WP Bakery, staff will just push you to move to Cornerstone as you just have seen. Maybe by just letting you with a broken site for more than a year.

Pro editor is much more advance than WP Bakery because in Pro you can create your own custom page layout that you can’t do with WP Bakery. So, I recommend using Pro rather than using the WP Bakery.
