I tried to update X theme to the latest version, 8.1.3, and my Wordpress Dashboard went blank. I had to go back to the 8.0.11 version to correct this. When is the latest version going to be fixed so this does not occur?

I would suggest you to copying your live website to your staging area. then update your theme, plugins and WordPress core as per our version compatibility page.
I would suggest you to few steps to update the theme and plugin.
- Delete the Cornerstone plugin.
- Update the theme.
- Now install the Cornerstone plugin.
