Every post on this subject refers to a text style option that no longer appears. Why has it been made so unbelievably difficult to do something as obvious as change the font size?

The font size can be set globally here: X > Theme Options > Typography > Body and Content.
If you are using Cornerstone in building your page, you probably have inserted a headline or a text element which has its own default styling. In the element settings, you should be able to set the font family and the font size in the element styling options. If you don’t see some of style options, you need to turn on the Advanced Mode by going to the Settings > Preferences > Advanced Mode
