I can’t seem to find how to choose whether the navigation collapsed shows the pane on the right or left side of the screen. I remember this being there somewhere in the past.

Please make sure that you are using the latest version of the theme:
You have to insert the Navigation Off-Canvas element or just the Off-Canvas element and insert the Navigation Collapsed element in the Off-Canvas content area. You can then select the Location where to display the panel in the Off-Canvas element settings:
