In case you want to have separate categories and tags for Photography, Projects, and Design then you need to create separate custom post types and custom taxonomy. To have a separate category layout for each category and tag page. It would require custom development. I would suggest you contact a developer who can assist you with your concerns or subscribe to One where customization questions are answered.
Alternatively, you can upgrade to a Pro theme where you would get Layout builder, with the help of Layout builder you can create a custom design for each archive page and category and tag page.
