Integrity Post Meta Data

Hi there,
I wish to edit the post meta data displayed to just the date of the post and the category. I’ve done this using CSS as suggested in many previous forum posts, but I’d really like to change the separator between the two and remove the separator after the category. I’m using a child theme and have looked at the functions.php, but can’t see how the separator is defined.
