There is a very smart looking cart, however when viewed on a mobile phone, this is buried in the navigation? How can I make sure that it is always visible on mobile?

Please note, the thread above is for X themes and since you’re using Pro you can do this without any custom coding. Create a new header using Header Builder (see https://theme.co/docs/header-footer-overview) and create two separate menus for Desktop and Mobile devices and show/hide them using hide during breakpoints feature.
