I have a recipe website and have it set up so that links in menu go to specific categories of posts. When you go to these pages, all of them say “Category Archives” at the top - I would like to change that so that it displays the name of each specific category. Is there a way to do this?

It seems that you are using the X theme. Please note that there is no option to change the “Category Archives” text. It would require custom development. I would suggest you please get in touch with a developer who can assist you with your concerns or you may subscribe to One where customizations questions are answered.Please note that we don’t provide custom development support it is out of the support scope.
Alertnativley you can upgrade the X theme to Pro theme where you would get the Layout builder to create custom layout for the archive pages. You can use the layout builder to create custom category archive layout for your category and display custom titles for each category.
