If you visit https://www.martinrayvaughan.com/blog/ you’ll see my Posts page that is from a Themeco site template. I have since changed to the site-wide template ‘Ethos Photography’.
Is there a way to style or change my Posts page to anything else? I am using Pro…

Thanks for writing to us.
It seems that you are using the Layout builder to create the Blog page, you can use the template that you are using or you can use the stater templates or you can create a custom design. To get the stater template you need to click on the Use template or you can start it from the scratch for custom design.
Please have a look at the doc of the layout builder.

OK - I guess what is tripping me up is that I do not have the option to “EDIT WITH CORNERSTONE” in my dashboard…because it is the Posts page.

It seems that you have created a layout for the blog page, please note if you assign the page as a Post page that means it is an archive page and you can not edit it but you can create a layout through the layout builder and assign the layout to the Blog archive page.
Now you need to go to the WordPress Dashboard —>Cornerstone —>Layout Builder
It would list all the layouts you need to select the layout and edit.
