Currently, the page builder requires a lot of drag and drop activity particularly for adding and moving elements on the page. Since you are not able to do this in the browser on a tablet device, building pages is not possible without a mouse. This aside, if you could build page content in X or Pro with a tablet or a phone would you?
Yes, not whole sites, but changing pages or posts that use Cornerstone with a tablet would be great.
