I no longer use WooCommerce and am trying to delete it so it can improve my site speed, but after I delete the plugin, my website goes to a white page and the only way I can get it to work again is to reinstall it.
Can anyone advise why?

You can login through FTP then edit the wp-config.php file and find the line: define( 'WP_DEBUG', false );. Set it to true then save the file. Log back in the admin area and you should be able to see some more error information when you redo the steps you are having issues with.
If you are not able to figure out the issue from the error messages you see, please provide the error message you are seeing in a Secure Note so that we can provide suggestions.
