WooCommerce Shop Page Nav/Header

Is there a way to add a custom header in theme pro to jus the shop page? Would I just need to add a new header and assign it to the shop page? Also, how do a setup a menu system like in the following url that has a sort of nav menu that allows sorting by attribute?
I am trying to do something like: https://www.ippolita.com/new-arrivals

Yes you can assign separate header to shop page. Just create a separate header and assign to shop page.

Regarding your other question, this is something need custom development we are really sorry which is out of our theme support scope.
You can search a similar woo-commerce plugins or take help from developer to do this.
