Is there a way we can format WooCommerce product pages like we can with the pages of the site. Using sections and elements?

Thanks for posting in! As of this moment, you cannot format or edit the product page layout. If you want a little longer, we are building a Layout Builder which would allow your to layout those pages that are not editable at the moment.
