Does anybody know of any good WooCommerce Customization Plugins, specifically to edit actually pages, almost like a builder similar to X?
Or is it still better to use hooks and the likes?
Also looking for Product Finder, similar to this site which is built with Shopify/Timber
Selecting the Make/Model/Year/Product sends you to a specific product page.

As of now you can’t edit Shop Index page using Pro Theme content builder. However the good new is that we are working to bring in that feature to the content builder that will enable users to design custom shop page layouts. Couple that with this quote from the 2018 Year in Review post they mentioned (check the 2019 Sneak Peek section near the end)…

…and I’m getting pretty optimistic about the idea that we may soon be able to build out WooCommerce pages using the builder!
In the meantime, Elementor looks very promising! In August they introduced a WooCommerce page builder. You’re looking at $50 per year for one site license, or $200/year for unlimited sites.
Regarding the Product Finder functionality you’re looking for, this plugin on CodeCanyon looks like it’ll fit the bill for $30.
