Why is the color of the header not changing? Please see screenshot attached.

Thanks for reaching us again. I have checked your page and I can see that you have inserted a text element. When using this element, you are limited to use <p> tag.
DO NOT use <h1> tags because it will then be using the global heading settings which is in X > Theme Options > Typography > Heading.
Remove the tag and the text color will take effect.
