my website just seems slow and clunky after the last few updates of woocomerce etc and I think I just want a fresh start. What would be the best way to delete and reinstall the theme again so it’s fresh with no errors?

I;m not sure reinstalling the theme will help you regarding this. I suggest that you make a complete backup of your website and clean the transients using the plugin below:
