I am really struggling to get my head around all the changes and wondered if there was a tutorial that runs through how to now use the classic and new elements.

Hi Jenny,
The classic elements work just as before.
You can find the tutorial for the new elements at:
If you only want to use Classic or V2 Elements, go to the Settings page of Cornerstone and select the option.
