I am using the X Pro theme but I would like to use the Shop (http://demo.theme.co/shop-icon/) demo for my site. How do I do that?

Pro does not have the Import Demo option as it has the Design Cloud feature.
However, it is not necessary to import a demo content if you want the shop view like the demo that you linked.
You just need to use the Icon stack and the shop page should display like the page you linked by default.
