Yes, you can update your PHP version to 7.3+. Please note that you need to have updated themes and plugins. I would also suggest you take backup for your site files and database before updating the PHP version.

It would be best that you copy your live site to a staging server and test out the compatibility of your whole site with PHP 7.3+.
