I’m coming to this client’s website after a few years of them not doing much with it. Originally I purchased the theme from Theme Forest. I’ve purchased the service update. I’m concerned about the seemingly vast distance between a 1.8x and the current version of 8.x. Can I just override the old version or…?

There could be some conflict when updating your client website from 1.8.x to the latest version of X. I suggest that you will upgrade the website in the staging area and let see if the process didn’t break your website. The worsts case scenario, I am seeing is that, you need to create your client website using the latest version and please update the theme every time there’s an update.
