There was a nice plugin doing that called “SB Welcome Email Editor” but it hasn’t been updated for more than two years and has not been tested with the latest 3 major releases of WordPress so I’m not sure if it’s working with the latest version of WordPress or not, but if it’s working then that would be the easiest way.
As an alternative, I found this tutorial very thorough and easy to understand, that’s in case you decided to give it a try and change the email template directly by writing some codes.
