Can someone give me instructions for adding a video at the top of the ethos 3 design (like this http://demo.theme.co/ethos-3/). The subpages don’t have the video just the home. So I didn’t think it was in the header.

Please edit the page where you want to add the header video and scroll down to the Slider Settings: Above Masthead and select the slider you have created. See the screenshot for details.
