I’m currently building a site (above) and when creating a text element and centering it, it does not center within the container, whereas with the previous version it would.

Click Align center on the column where the text element is placed.

Do you mean there…? If so, it was already selected…

You’ve activated the “Text Column” feature which adds 2 columns so it centers the text 1/2… If you unselect that setting in the text options then it will center over the whole width.
