On our new shop I cant seem to locate the switch to classic checkout or cart button that is usually on the right hand side - please advise

Sometimes, the only screenshot doesn’t help us to recognize the issue you are having. We need to examine your site to determine the cause of the issue. Can you please share the URL of the site along with the login credentials for your site in a secure note to examine it further, including:
– WordPress Site URL & Login URL
– WordPress Admin username/password
To create a secure note, click the key icon underneath any of your posts.

I have checked the checkout page and found that a Custom Layout is assigned to it, and the design and the styles come from that. If you want the default design, you can unassign that layout and check.

Hi I have removed that but it is still not showing the classic checkout?
Thank you for the update. Have you tried removing the Checkout block and replacing it with the woocommerce_checkout shortcode? You can place the shortcode in a Code or Shortcode block. Please check the link below: https://woocommerce.com/document/woocommerce-shortcodes/
