Is the plugin version compatibility information up to date? Woocommerce is apparently only supported up to v4.9.* and v5.1.* has been available for some time now…

Yes, the version compatibility page is up to date. Just to let you know that before we release an updates to our bundled plugins our developers are making sure that they are compatible with the current version of the our themes. I suggest that you just wait for the automatics updates from the said plugin.
