I’d like to show only the excerpt of posts on category pages. My posts are heavily image-focussed so the images show up on category pages. However when I add text to the post, the whole length shows up, instead of just an excerpt. The Theme Options Blog Excerpt Length is set to 60. I guess that’s 60 words? But the whole post is showing up anyway. I feel like I must be missing something obvious.

Regretfully there is no option to show the post excerpt only on the category archive page, it would require custom development. I would suggest you please contact a developer who can assist you with your concerns or you can subscribe to One where customization questions are answered.
For the full content showing in place of the excerpt, it might be the issue of customization or plugin conflict, I would suggest you troubleshoot with a few of the common issues before we investigate your settings.
