Are there any shortcodes similar to recent posts for displaying posts? Instead of displaying my recent posts, I would like to display specific posts.

Regretfully we only have Recent Posts element. Please go to X > Global Block and create a block. In your block, you can insert the Classic Recent Posts element and then utilize the category filter so that only specific post belonging to a particular category will display.
By default the element will display up to 4 post items only. If you need to display 8 items, you will insert another Classic Recent Posts element with the same category filter and this second element, you will have to insert an “Offset” of 4 so that there will be no duplicate post items.
After you have created the Global Block, you can then make use of the Global Block shortcode so that you can use it on the sidebar or in your footer widget area. To learn more about the Global Block, please check this out:
