I want to set up my blog display to show my latest posts by blog category. Can you please share how I can customize xtheme to do this? Preferred if I can do this without installing any additional plugins.

You can not have such a feature for blog posts. We have that feature for the Portfolio posts which you can add a page and set the template of the page to portfolio:
If you want the blog posts to have the filtering feature you need to use the Essential Grid plugin.
(I understand that you said you do not want to use plugins but you have to use this bundled plugin as our theme does not have the feature for that).
