HI – is it possible to increase number of items on a portfolio page or remove the pages inside of the portfolio page entirely and just have portfolio items scrollable?

Unfortunately, I could not get exactly what you mean, if you mean the archive page of the portfolio you do not have options available to change the number.
But you can add a page and set the template of the page to be a Portfolio Layout which will give you some filterable features that I think will make it more likely what you want:
