I’m working on a website for a client. We are switching from X Theme and Cornerstone to another theme. How can I remove all of the shortcodes leftover from X Theme and Cornerstone? The shortcodes are on hundreds of posts and pages. What is the easiest way to remove them and keep content?
I have also noticed that if I remove X Theme and cornerstone all my text content vanishes from some posts. All that is left is cornerstone code.

It seems that all the content of the website is created using the Cornerstone page builder. If that is the case, you need to either keep the Cornerstone page builder or recreate all the pages and posts using another builder.
The shortcodes that you see is part of the Cornerstone content.

So if someone decides to switch themes / plugins, their website is destroyed and they have to start all over again?
You have no tools or suggestions to remove leftover shortcode?
There is no safe way to retain text content when removing X Theme and Cornerstone? (my content is erased on some of my posts / pages when i uninstall your theme and cornerstone)

Please understand that Cornerstone is a page builder integrated in the X theme so that you can layout your page/post contents more easily. This means that as you switched themes, Cornerstone plugin must be keep active so that the page/post contents will display properly. This is also true when you use Elementor, Divi Builder or the WPBakery Page Builder. They must remain active when you switch between themes.
Switching themes while retaining the page/post contents is only possible if and only if you have created the post/page contents with the default WordPress Editor.
