Hi, currently my recent posts element is vertically aligned and is showing one post at a time stacked on top of each other.
I need to be able to display two posts side by side and then continuing this theme down the page.
I have tried using the grid plugin but this isn’t really what I’m looking for.

You can use Classic Recent Post element in Cornerstone and from there you can set orientation.
You can place couple of recent posts elements below and use the offset feature to display more posts below. According to this example, you can add 2,4,6 as offset foe next 3 recent posts elements.
