I have a license of PRO, for my main domain “learnmechanical.com”, is it possible to use x theme on a subdomain like quiz.learnmechanical.com with that single license?

No, unfortunately. First of all the Pro and X licenses are different and you can not use a Pro license for an X installation. Secondly, each license is valid for one WordPress instalation regardless of it be located in a sub domain or not.
If you want to have a staging version of your website for development purposes you can use the Staging slot of your licesne.
