Is there a way that I can edit the shop page with Pro? And is it possible to add / remove additional carousels on the shop page? Thanks.

The content of the Shop page is dynamically displayed by the WooCommerce template file so it can’t be edited by the Content Builder which could edit regular post type content.
Regarding the carousels in the shop page, would you mind providing the URL of your shop page and a screenshot of the carousel so we could inspect what displays it.

I foresee challenges to display product carousels though.

Yes, it’s possible. You just need to create a page template(with content builder) then add the product shortcodes to that page:
For the product carousel slider, you can try with the following plugins:
- https://wordpress.org/plugins/product-carousel-slider-for-woocommerce/
- https://wordpress.org/plugins/yith-woocommerce-product-slider-carousel/
