Hey I’m using Pro for all my sites. I keep on getting a Cornerstone plugin update. I thought Cornerstone was built into Pro? If so, can I just delete the Cornerstone plugin?

Yes, you can delete Cornerstone from the server as you are using Pro Theme and Cornerstone page builder tool is integrated into Pro Theme.
