I am having trouble finding the right settings to display a full size image above the menu bar, using the starter template ‘center logo’ in pro header.
Could you help me to find the correct settings for this please?

It was not selected, no, I think it was the bar dimensions that was the problem.
I do have two follow up questions though.
Will this be responsive for different screen sizes, or will I have to make a separate menu for this?
And secondly, (excuse the rough images) I am wanting the logo to overhang the nav bar above and below, like so. Is there a way for this to scale back to the size of the nav bar size when it becomes sticky, and back to overhanging when scrolled back to the top?

Please set a fixed height for your bar which is much shorter than the height of your logo image. If you want to display two different logo image size as the user scroll the page, it is best that you create two versions of the bar. One is positioned relative and the other is a fixed or a sticky bar which is initially hidden. It will only display once you scroll the page.
