It appears that the color selectors simply do not open since updating to 2.0.2. Cleared cache, cleared V2 style cache and all of that fun stuff. What’s odd is that it works in the content builder, just not header.

Scratch that – clearing V2 style cache did work. Just took a minute. 
Glad this is now working now and thank you for sharing the steps you did. This will helps others having the same issue.
