Is there a way to keep a certain video/videos at the top of the portfolio?

Regretfully this isn’t a feature in X and Pro. It could be possible with custom development or a plugin like Sticky Menu (or Anything!) on Scroll, but this would be outside the scope of support we can offer. You may wish to consult a developer to assist you with this.
