Portfolio Customization - Filtering

One more question for customizing the portfolio. Is it possible to:

• Have the title of the page with an accent? ( Réalisation)
• Remove the first sorting layer “Choisir” in order to see the sorting choices directly?

I do have a child theme installed.

For the first question, you are using a font named Orbitron and that font renders the accent this way:
