Is it possible to change the order of portfolio items in the admin panel / dashboard to be alphabetical instead of chronological?
This will be a significant help for managing the (mega load) of items I’ll be adding in the next couple of days.

The portfolio is a custom post type and the dashboard order can not be changed using the standard WordPress dashboard settings.
This is not related to our theme and more of a broader question in how to re-order custom post types. We do not have any suggestions on how to force the order to be alphabetical as it needs customization and is outside of our support scope.
But there is a plugin that you can use to change the order manually with a drag and drop that you might be interested in:
