Page templates are not working for me. When I try to set up a sidebar template, fullwidth etc. nothing happens. The default template is the only thing that applies. Any idea how I resolve?

That is unusual. Please make sure you are fully updated.
On each page, click edit page on top wordpress admin bar> On the classic backend editor> under the blue update button > you will find > page attributes > page template.
Try Blank No Container Header Footer for fullwidth.
