After editing a page outside of cornerstone (a minor change which was quicker to do in text mode) I cannot edit the page again in cornerstone. What is the reason for this - it seems like a ridiculously over the top approach, we’ve paid for x - why shouldn’t we be able to use it?

Cornerstone uses serialized data and by doing that you broke the data. There was a fairly big warning before you changed the text outside of Cornersone which says yo won´t be able to edit the page if you do that.
Cornerstone pages should be edited only in Cornerstone.
You need either to restore a backup before you did that, or you need to rebuild the page.
