A customer of mine is using layouts and loopers to display LearnDash courses. Is there a way for me to build in a filter to show in chronological order, or add filters depending on the Course?

Regretfully, Filter and Sort are not features in the builders yet. This is a feature in the mind of our development team though so it might be that they’ll add some sort of filter in the future.
