how do I change the text in the Nonprofit theme - specifically the part on the home pages that say “the mission statement - we put children first”?

Thanks for writing in!
You will need to edit the page in Cornerstone. And if you cannot see the headline in the preview area, you can use the skeleton mode to edit the page for faster response and easy access of the elements on the preview area.
With skeleton mode, you should be able to access the headline and other elements that were not visible in the live preview area.
