I am trying to find my options for Pro. I see them in examples online but not in my dashboard. Please advise.

If you are looking for the Theme Options, it can be accessed in Cornerstone > Theme Options from the Admin Bar.
And for the Cornerstone Settings, you can go to Cornerstone > Settings from the left panel.
