We recently updated cornerstone & that has left us with a dead mobile menu. I want to do the full update from v4 to 7 of X but am terrified to do so because there is no child theme on this site & we have no way of creating one?

No need to add a child theme if you want to update.
Maybe you are referring to staging site? Since your theme version is a bit old, it would be best for your site if you will create a staging. Then you need to backup your site first. Then try to update staging site setup first. This will ensure that if you encounter issue, you can fixed it up first there before doing it on live.
You might want to ask your hosting provider for staging service. Most providers offer staging.
