I just want to put a simple email sign up in my footer. Gravity, ConvertPlus, email forms don’t seem to provide it in a simple way. Please help

Since Email Forms does not work for you. You may use 3rd party Mailchimp plugin. It usually provide a shortcode or widget that you can use to display the subscription form. Kindly check out which plugin works out best for you.
Meanwhile, if you want to give Email Forms a try, you can find out this documentation on how you can set it up properly.

You will have to properly set up email forms by integrating the MailChimp or ConvertKit. Please check out Email Forms documentation again.
