The mobile version is not updating. DO I have to re-update the mobile version entirely separately? Shouldn’t it update as I update the desktop version???
Cornerstone is updated, the theme is updated, why isn’t it working?

Yes, kind of, because on that particular demo layout, there are sections that are dedicated to desktop and there are also sections that are dedicated to mobile. That trick is achieved by utilizing the Hide During Breakpoint feature.
Please preview your page builder in small (mobile) preview
That way you see those mobile dedicated section.

So essentially every time I update my home page I’ll have to go back and update my mobile version? That’s pretty frustrating.

That would always be the case because you have a separate sections that displays for the desktop and for the mobile version. If you only have one section that displays in columns and collapse into one column for mobile, then there is no need to do that.
