I have some submenus, and on mobile in order to expand the submenus you have to click on the dropdown icon to the right, you can’t just click on the title of that submenu. Is there a way to change it so it’s not so hard to expand the submenu? I’m concerned that users will try clicking on these items and think that they are not working rather than tap around trying to find the right spot to click.

It requires custom development to open submenu on click of a menu item. I would suggest you contact a developer who can assist you with your concern.
It is a proper UI, the dropdown icon indicates the user that there is more menu item. In case if you added a menu with a link and there you have added more menu item as a submenu in that case when the user clicks on the menu it would not open a submenu. It would take you to that page since there is no option to hover in mobile phone
